Like bonsai, truly good things endure. We arrange a small room around a single living tree, a single cup, a single quiet hour.
Beans are roasted at our own Shirafushi roastery and brewed by hand, one cup at a time. Nothing is rushed. Nothing is loud.

漆喰、焼杉、格天井。
Shikkui plaster walls, charred yakisugi cedar, a coffered ceiling. A single bonsai breathes at the centre of the room.
Walk in. There are no reservations. There is only the next cup.
Roasted in small lots.
白伏焙煎所。
Each origin is roasted by hand at our own Shirafushi roastery and delivered to the Ginza room within days.
